Montare le uova con un pizzico di sale e lo zucchero in una planetaria o con uno sbattitore elettrico per almeno 15-20 min. Utilizzare sempre le uova a temperatura ambiente. Nel frattempo imburrare una teglia di ca. 28 cm di diametro. Dopo 20 min. l&#8217;impasto si sar\u00e0 gonfiato. Aggiungere delicatamente la farina, la maizena\u00a0e il lievito.\u00a0Infornare e <strong>assolutamente non<\/strong> aprire il forno per i primi 30 min. Testate la cottura con uno stuzzicadenti\u00a0in mezzo alla torta, se infilando e estraendolo non rimane attaccato impasto il pan di spagna \u00e8 cotto. Il pan di Spagna pu\u00f2 essere conservato qualche giorno in frigo se ben avvolto in pellicola trasparente.
